it bridges the old and the new, connects people and societies, fosters creativity and innovation, and provides strength and health.

And being proud to work with your hands and your thought. My work is inspired by this fact of Japanese identity of culture.

Since I started this business in 2015 I became more aware of global issues: climate change and increasing figures of obesity and food waste. The problem of today and the next generation, that I also take a responsibility.

From this reason that I prefer to use ingredients that can be traced back to their origins, such as vegetables locally produced using ecological farming methods, fish from nearby natural waters, meat from sustainable sources. My recipes are original made after traditional cookery and don't use flavour enhancers or artificial flavours.

Those are a part of my workshops and give an answer why my foods taste different from others.
